Delicious and nutritious almond flour pancakes flavored with warm pumpkin spice. A gluten-free, low-carb breakfast option perfect for fall mornings.

Ingredients

  • 1 cup almond flour
  • 1/2 cup pumpkin puree
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 tablespoon maple syrup (optional)
  • Cooking oil for the pan

Instructions

  1. In a mixing bowl, combine almond flour, baking powder, cinnamon, nutmeg, and salt.
  2. In another bowl, whisk together the pumpkin puree, eggs, and maple syrup if using.
  3. Mix the wet ingredients into the dry ingredients until well combined.
  4. Heat a non-stick skillet over medium heat and lightly grease with cooking oil.
  5. Pour small amounts of the batter onto the skillet and cook until bubbles form, then flip and cook until the other side is golden.
  6. Serve warm with your favorite toppings.
