Delicious apple pumpkin muffins with a crumbly streusel topping, perfect for cozy mornings.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup pumpkin puree
  • 1/2 cup apples, peeled and diced
  • 1/4 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1/4 cup brown sugar
  • 1/4 cup rolled oats
  • 2 tablespoons butter, softened

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg in a large bowl.
  3. Whisk together the pumpkin puree, diced apples, milk, oil, and egg in another bowl until well combined.
  4. Fold the wet ingredients into the dry ingredients until just mixed.
  5. Mix the brown sugar, oats, and softened butter to create the streusel topping in a small bowl.
  6. Fill each muffin cup about 2/3 full with the batter, then sprinkle the streusel topping on each.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool slightly before serving. Enjoy your cozy muffins!

Notes

Serve warm or at room temperature. These muffins are great with coffee or tea. Store in an airtight container for up to three days, or freeze for up to three months.
