Easy, budget-friendly burritos filled with refried beans and melted cheese, perfect for busy weeknights.

Ingredients

  • 2 cups refried beans
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 8 large flour tortillas
  • 1/2 cup salsa
  • 1 teaspoon cumin
  • Salt to taste
  • Olive oil (for cooking)
  • Optional toppings: sour cream, guacamole, lettuce, diced tomatoes

Instructions

  1. In a bowl, mix the refried beans, cheese, salsa, cumin, and salt until well combined.
  2. Heat a skillet over medium heat and add a little olive oil.
  3. Place a tortilla on a flat surface and spoon some of the bean and cheese mixture onto the center.
  4. Fold the sides of the tortilla over the filling, then roll it up from the bottom.
  5. Place the burrito seam-side down in the skillet and cook until golden brown, about 2-3 minutes.
  6. Flip and cook the other side until golden and crispy.
  7. Serve warm with optional toppings.

Notes

For added flavor, try spices like chili powder or garlic powder in the filling. Ensure tortillas are warm to prevent cracking while rolling.
