A warm and comforting beef stew, perfect for chilly days with tender beef, potatoes, and vegetables simmered in a savory broth.

Ingredients

  • 2 lb beef chuck, cut into cubes
  • 4 medium potatoes, diced
  • 2 carrots, chopped
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine
  • 2 bay leaves
  • 1 tsp thyme
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp olive oil

Instructions

  1. Cut the beef into cubes and season with salt and pepper.
  2. Heat olive oil in a large pot over medium-high heat.
  3. Brown the beef on all sides, then remove from the pot.
  4. Add chopped onions, celery, and carrots to the pot and sauté until softened.
  5. Add minced garlic and cook for an additional minute.
  6. Pour in red wine to deglaze the pot, scraping up any brown bits.
  7. Return the beef to the pot, add potatoes, beef broth, bay leaves, and thyme.
  8. Bring to a boil, then reduce heat and let simmer for 90-120 minutes until the beef is tender.
  9. Adjust seasoning with salt and pepper.
  10. Serve warm.
