A delightful twist on the classic breakfast treat, these cookies bring the sweet, warm flavors of cinnamon and brown sugar to your kitchen.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup powdered sugar (for frosting)
  • 1-2 tablespoons milk (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • Pinch of salt (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the butter, brown sugar, and granulated sugar together until light and fluffy.
  3. Add the egg, milk, and vanilla extract, mixing until combined.
  4. Whisk together the flour, baking powder, baking soda, cinnamon, and salt in another bowl. Gradually add the dry ingredients to the wet mixture until just combined.
  5. Chill the dough in the refrigerator for about 30 minutes.
  6. Roll out the dough on a floured surface to about 1/4 inch thick. Cut into rectangles.
  7. Place half of the rectangles on a baking sheet lined with parchment paper.
  8. Spoon a small amount of cinnamon filling onto the center of each rectangle, then top with another dough rectangle. Seal the edges with a fork.
  9. Bake for 12-15 minutes until lightly golden.
  10. Mix powdered sugar, milk, vanilla extract, and a pinch of salt to create the frosting.
  11. Drizzle or spread the frosting on top of the cookies. Enjoy!

Notes

Serve these cookies warm or at room temperature, with a glass of cold milk for enhanced flavors. Store in an airtight container for up to a week, or freeze for longer storage.
