A comforting and hearty soup that brings the flavors of traditional cabbage rolls in a warm, easy-to-make dish.

Ingredients

  • 1 small head green cabbage, chopped
  • 1 pound lean ground beef
  • 1 cup cooked rice
  • 4 cups tomato-based vegetable broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • Salt and pepper to taste
  • 1 teaspoon paprika
  • Fresh parsley for garnish

Instructions

  1. Brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Add the diced onion and minced garlic, and cook until softened.
  3. Stir in the chopped cabbage and diced tomatoes, followed by the vegetable broth.
  4. Add the cooked rice, paprika, salt, and pepper.
  5. Bring the soup to a simmer and let it cook for about 30 minutes.
  6. Garnish with fresh parsley before serving.

Notes

For extra flavor, add herbs like thyme or bay leaves. Substitute ground turkey or chicken for a lighter option.
