Deliciously moist Carrot Cake Bars with cream cheese frosting, perfectly blending sweet carrots and spices.

Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 4 large eggs
  • 1 cup vegetable oil
  • 2 cups grated carrots
  • 1 cup crushed pineapple (drained)
  • 1 cup chopped walnuts or pecans (optional)
  • 8 oz cream cheese (for frosting)
  • 1/2 cup butter (for frosting)
  • 4 cups powdered sugar (for frosting)
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg in a large bowl.
  3. Beat the eggs in another bowl and mix in the oil, carrots, and pineapple.
  4. Combine the wet ingredients with the dry ingredients and stir until just mixed. Fold in the nuts if using.
  5. Pour the batter into the prepared baking pan and spread evenly.
  6. Bake for 25-30 minutes, or until a toothpick comes out clean.
  7. Prepare the frosting by creaming together the cream cheese and butter, then gradually mix in the powdered sugar and vanilla.
  8. Spread the cream cheese frosting on top once the cake bars are cooled.
  9. Cut into squares and serve.

Notes

Store in an airtight container in the refrigerator for up to a week. Can be frozen for about 3 months.
