Cheesy Taco Potatoes are an easy and delicious meal combining baked potatoes with the vibrant flavors of tacos, customizable with your favorite toppings.

Ingredients

  • 4 medium potatoes
  • 1 cup shredded cheddar cheese
  • 1 pound ground beef
  • 1 taco seasoning packet
  • 1 cup salsa
  • 1/2 cup sour cream
  • Chopped green onions (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork, then bake for 45 minutes or until tender.
  3. In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  4. Add taco seasoning and salsa to the beef; stir and cook for another 5 minutes.
  5. Once the potatoes are done, let them cool slightly, then slice them open lengthwise.
  6. Top the potatoes with the taco beef mixture and shredded cheddar cheese.
  7. Return to the oven and bake for an additional 5-10 minutes, until the cheese is melted.
  8. Remove from oven and drizzle with sour cream and garnish with chopped green onions before serving.

Notes

Poke holes in the potatoes before baking to prevent them from bursting. For added spice, incorporate jalapeños into the beef mixture.
