A simple and nutritious Cottage Cheese Egg Bake perfect for breakfast, brunch, or a light dinner, packed with protein and veggies.

Ingredients

  • 6 large eggs
  • 1 cup cottage cheese
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup diced vegetables (like bell peppers, spinach, or onions)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Optional: herbs to taste (such as parsley or chives)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Whisk together the eggs, cottage cheese, salt, pepper, garlic powder, and onion powder until well combined.
  3. Stir in the shredded cheese and diced vegetables.
  4. Pour the mixture into a greased baking dish.
  5. Bake for 30-35 minutes, or until the egg is set and lightly golden on top.
  6. Let cool slightly before slicing. Enjoy warm or refrigerate for leftovers.

Notes

For a creamier texture, use whole fat cottage cheese. You can add different spices or herbs to enhance flavor. Substituting veggies is encouraged as long as they are diced small enough to cook through.
