A hearty and comforting dish that brings together the best of ingredients in one pot, perfect for busy people.

Ingredients

  • 1 pound ground beef
  • 4 medium potatoes, diced
  • 1 can (15 oz) beans (like black or pinto), drained and rinsed
  • 1 can (15 oz) corn, drained
  • 2 cups shredded cheese (cheddar or a blend)
  • 1 can (28 oz) diced tomatoes with chili (or tomato sauce)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Add the ground beef, diced potatoes, drained beans, drained corn, chopped onion, and minced garlic into a slow cooker.
  2. Pour the diced tomatoes over the mixture and season with salt and pepper.
  3. Stir everything together until well combined.
  4. Cover and cook on low for 360 minutes (6 hours) or high for 240 minutes (4 hours), until the potatoes are tender and the beef is cooked through.
  5. Sprinkle the cheese on top about 30 minutes before serving and cover until melted.
  6. Serve warm and enjoy!

Notes

Browning the ground beef before adding it to the slow cooker can enhance its flavor. Customize by swapping out ground beef for turkey or adding other vegetables.
