Cream of Mushroom Soup

A comforting and creamy soup made with fresh mushrooms, perfect for any season.

Ingredients

  • 1 lb fresh mushrooms, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add the chopped onion and garlic, and sauté until soft.
  3. Add the sliced mushrooms and cook until they start to release their moisture and become tender.
  4. Pour in the broth and bring to a simmer.
  5. Let it simmer for about 15 minutes.
  6. Using an immersion blender or a regular blender, puree the soup until smooth.
  7. Return to the pot, stir in the heavy cream, and season with salt and pepper.
  8. Heat through but do not boil.
  9. Serve hot, garnished with fresh parsley.

Notes

This soup can be customized with different mushrooms and herbs for added flavor.
