A comforting and flavorful soup perfect for cozy nights in or as a starter for any meal.

Ingredients

  • 2 cups mushrooms, sliced
  • 1 onion, chopped
  • 2 tablespoons butter
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 1 teaspoon thyme (optional)

Instructions

  1. Melt the butter in a large pot over medium heat. Add the chopped onions and sauté until translucent.
  2. Stir in the sliced mushrooms and cook until they are golden brown.
  3. Pour in the broth and bring to a boil. Reduce heat and simmer for about 15 minutes.
  4. Add the heavy cream, salt, pepper, and thyme (if using) to the pot. Stir well and let it simmer for an additional 5 minutes.
  5. Blend the soup for a creamy texture, if desired, and serve hot.

Notes

Serve with fresh herbs and crusty bread. Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for longer storage.
