Delightful and simple beef enchiladas made with just five ingredients, perfect for busy weeknights.

Ingredients

  • 2 cups cooked ground beef
  • 1 cup enchilada sauce
  • 8 small flour tortillas
  • 1 cup shredded cheese
  • 1 can black beans

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine the cooked ground beef and half of the enchilada sauce in a bowl.
  3. Fill each tortilla with the beef mixture, roll them up, and place in a baking dish.
  4. Pour the remaining enchilada sauce over the rolled tortillas.
  5. Sprinkle cheese on top.
  6. Bake in the preheated oven for about 20 minutes or until the cheese is bubbly.
  7. Serve hot and enjoy!

Notes

For a spicier kick, use a hot enchilada sauce instead of mild. Store leftovers in an airtight container in the refrigerator for up to 3 days.
