A classic French Onion Soup featuring caramelized onions, rich beef broth, and topped with melted Gruyère cheese on toasted French bread.

Ingredients

  • 4 large onions, sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • 8 cups beef broth
  • 1 teaspoon dried thyme
  • 1/2 cup sherry
  • 1/2 cup white wine
  • Salt and pepper to taste
  • French bread, toasted
  • Grated Gruyère cheese

Instructions

  1. Melt the butter and olive oil in a large pot over medium heat.
  2. Add the sliced onions and sugar. Cook until the onions are caramelized, about 30 to 40 minutes.
  3. Stir in the beef broth, thyme, sherry, and white wine. Bring to a simmer and cook for 15 to 20 minutes.
  4. Season the soup with salt and pepper to taste.
  5. Serve in bowls topped with toasted French bread and grated Gruyère cheese.
  6. Optional: Place the bowls under a broiler until the cheese is bubbly and golden.

Notes

For best flavor, use a mix of yellow and sweet onions. Be patient with caramelizing the onions for maximum sweetness.
