Homemade Chicken Noodle Soup

A warm and comforting dish perfect for chilly days, made with chicken, vegetables, and egg noodles.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 8 ounces egg noodles
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery. Cook until softened, about 5 minutes.
  2. Stir in the garlic and cook for an additional minute.
  3. Pour in the chicken broth and add the shredded chicken, thyme, bay leaf, salt, and pepper. Bring to a simmer.
  4. Add the egg noodles and cook according to package instructions until al dente.
  5. Remove the bay leaf, adjust seasoning, and garnish with fresh parsley before serving.

Notes

Use leftover rotisserie chicken to save time. For richer flavor, add a splash of lemon juice just before serving.
