A delightful dessert featuring caramelized pineapple and cherries atop a soft, fluffy cake. Perfect for gatherings or cozy nights at home.

Ingredients

  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1 can pineapple slices in juice
  • Maraschino cherries
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, melt the butter and brown sugar together over medium heat until it starts to bubble. Pour this mixture into a cake pan.
  3. Arrange the pineapple slices on top of the melted butter and sugar mixture. Place a maraschino cherry in the center of each pineapple slice.
  4. In a separate bowl, mix the flour, granulated sugar, baking powder, and salt. Then, add the eggs, vanilla extract, and milk. Stir until the mixture is smooth.
  5. Pour the cake batter over the arranged pineapple and cherries.
  6. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the cake comes out clean.
  7. Allow the cake to cool for a few minutes before inverting it onto a serving plate.
  8. Serve warm, delightfully paired with whipped cream or vanilla ice cream.
