A warm and hearty chili combining comforting flavors with the unique sweetness of pumpkin, perfect for chilly nights.

Ingredients

  • 1 can pumpkin puree
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups vegetable broth
  • 1 bell pepper, chopped

Instructions

  1. Sauté the chopped onion and garlic until soft.
  2. Add the chopped bell pepper and cook for another 3-4 minutes.
  3. Stir in the chili powder and cumin, cooking for 1 minute until fragrant.
  4. Add the pumpkin puree, kidney beans, black beans, diced tomatoes, and vegetable broth.
  5. Season with salt and pepper to taste.
  6. Bring to a boil, then reduce heat and let simmer for 20-30 minutes, stirring occasionally.
  7. Serve hot in bowls with your favorite toppings.

Notes

For an extra kick, consider adding diced jalapeños or cayenne pepper. Using fresh pumpkin instead of canned will enhance the flavor.
