Delightful Pumpkin Cream Cheese Muffins combine warm flavors of fall with creamy goodness, perfect for breakfast, brunch, or a snack.

Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup cream cheese, softened
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger
  • 1/4 tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine the pumpkin puree, cream cheese, sugar, brown sugar, vegetable oil, and eggs in a large bowl until smooth.
  3. Whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt in another bowl.
  4. Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
  5. Fill the muffin cups about 2/3 full with the batter.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Let cool before serving.

Notes

Serve warm with a drizzle of icing or cream cheese frosting. Best enjoyed with coffee or tea. Add nuts or chocolate chips for variation.
