Ingredients
10 slices of brioche or challah bread
3 eggs
3/4 cup milk
6 oz. of canned pumpkin
2 tsp. vanilla
2 tbsp. flour
1/2 tsp. cinnamon
1 tbsp. brown sugar
4 tbsp. butter (very softened)
1/2 tsp. cinnamon
1 tsp. brown sugar
1/4 tsp. nutmeg
Instructions
Add the butter, cinnamon, brown sugar, and nutmeg to a small bowl. Whisk until all ingredients are well combined. Place the bowl in the freezer while you make the French toast.
Preheat a skillet sprayed with cooking spray to medium-high heat.
In a mixing bowl, mix together the eggs, milk, vanilla, and pumpkin. Whisk until everything is well combined.
In another small bowl, mix together the flour, cinnamon, and brown sugar. Add this mixture into the wet ingredients and whisk until fully combined.
Dip each slice of bread into the egg mixture, making sure to coat both sides. Shake off any excess. Be careful not to let the bread soak too long, or it will become soggy.
Place the coated bread in the hot pan and cook until golden brown, about 3-4 minutes on each side.
Serve immediately, topped with pieces of the frozen butter.
Notes
For a richer flavor, use whole milk or cream. Drizzle with maple syrup for added sweetness.
