A comforting soup with the heartiness of potatoes, smoky bacon, and tangy ranch dressing, perfect for chilly days.

Ingredients

  • 4 cups potatoes, diced
  • 6 slices bacon, cooked and crumbled
  • 1 packet ranch dressing mix
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Cook the bacon until crispy in a large pot. Remove and crumble.
  2. Add the diced potatoes and chicken broth to the same pot. Bring to a boil and simmer until the potatoes are tender.
  3. Stir in the ranch dressing mix and heavy cream.
  4. Cook for an additional 5 minutes, stirring occasionally.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with crumbled bacon and chopped green onions.

Notes

For a thicker soup, blend a portion of the soup and mix it back in. Use firm potatoes like Russets or Yukon Golds for the best texture.
