Delightful cookies that combine the rich flavors of cheesecake with the sweet goodness of salted caramel.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 8 ounces cream cheese, softened
  • 1/2 cup caramel sauce
  • Sea salt for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the egg and vanilla extract until well combined.
  4. Whisk together the flour, baking soda, and salt in another bowl, then gradually add to the wet ingredients, mixing until just combined.
  5. Beat the cream cheese until smooth and mix in the caramel sauce until well combined.
  6. Drop spoonfuls of cookie dough onto the prepared baking sheets, then make a small indentation in each cookie and fill it with a teaspoon of the cream cheese caramel mixture.
  7. Bake for 10-12 minutes until the edges are lightly golden.
  8. Remove from the oven and sprinkle a little sea salt on top of each cookie while they are still warm.
  9. Let the cookies cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.

Notes

For a richer treat, consider drizzling extra caramel sauce over the cookies once they cool.
