A delightful cake that transforms overripe bananas into a moist and fluffy dessert, perfect for any occasion.

Ingredients

  • 4 ripe bananas
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 8 oz cream cheese, softened
  • 4 cups powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. Mash the ripe bananas in a large bowl.
  3. Beat in the softened butter and sugar until combined.
  4. Add the eggs and vanilla, mixing well.
  5. Combine flour, baking powder, baking soda, and salt in another bowl. Gradually add the dry ingredients to the banana mixture and mix until just combined.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the cake cool completely in the pan.
  9. Beat the cream cheese until smooth for the frosting, then gradually add in powdered sugar and milk until desired consistency.
  10. Spread the cream cheese frosting over the cooled cake and cut into squares to serve.

Notes

Use very ripe bananas for the best flavor. Alternatively, feel free to add nuts or chocolate chips for a fun variation.
