A delightful twist on traditional chili, featuring pumpkin for added sweetness and creaminess, perfect for cozy fall and winter meals.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 oz) pumpkin puree
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 2 cups vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and sauté until soft, about 5 minutes.
  3. Stir in the minced garlic and bell pepper, and cook for another 2-3 minutes.
  4. Add the pumpkin puree, black beans, kidney beans, diced tomatoes, and vegetable broth to the pot.
  5. Season with chili powder, cumin, salt, and pepper. Mix everything well.
  6. Bring the chili to a boil, then reduce the heat to low. Cover and let it simmer for about 30 minutes, stirring occasionally.
  7. Taste and adjust seasonings if necessary before serving.

Notes

For a spicier chili, add diced jalapeños or a pinch of cayenne pepper. You can also use fresh pumpkin instead of canned.
