A delicious and hearty stew, perfect for family gatherings, made with tender beef, spices, and fresh vegetables.

Ingredients

  • 2 lbs chuck roast, cut into chunks
  • 3 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 jalapeños, sliced
  • 1 can (14 oz) diced tomatoes
  • 2 cups beef broth
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • Rice, beans, and tortillas for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Brown the chuck roast on all sides, then remove and set aside.
  2. In the same pot, add the onions and sauté until softened. Add the garlic and jalapeños, cooking for another minute.
  3. Return the beef to the pot and stir in the diced tomatoes, beef broth, cumin, oregano, salt, and pepper.
  4. Bring to a boil, then reduce to a simmer. Cover and cook for 90 to 120 minutes, until the beef is tender.
  5. Serve hot with rice, beans, and warm tortillas.

Notes

Marinate the beef for extra flavor and adjust the heat level as desired. For thicker stew, let it simmer longer with the lid off.
