Homemade Chicken Noodle Soup

A classic comfort food that warms the heart and is easy to make with simple ingredients.

Ingredients

  • 1 whole chicken or chicken parts (about 3-4 lbs)
  • 8 cups of water
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 2 teaspoons of salt
  • 1/2 teaspoon of black pepper
  • 1 teaspoon of dried thyme
  • 8 oz egg noodles
  • Fresh parsley for garnish

Instructions

  1. In a large pot, combine the chicken and water. Bring to a boil and skim off any foam.
  2. Add the sliced carrots, celery, chopped onion, minced garlic, salt, pepper, and thyme.
  3. Reduce the heat, cover, and simmer for 60 minutes until the chicken is cooked thoroughly.
  4. Remove the chicken from the pot, let it cool, and shred the meat, discarding the skin and bones.
  5. Return the shredded chicken to the pot.
  6. Add the egg noodles and cook until tender, about 10 minutes.
  7. Adjust seasoning to taste, then serve hot, garnished with fresh parsley.

Notes

For extra flavor, roast the chicken before adding it to the pot, and feel free to add more vegetables for additional nutrition.
