Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 can cream of chicken soup
  • 1 cup heavy cream
  • 1 cup frozen mixed vegetables (carrots, peas, corn)
  • 8 ounces egg noodles
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Place the chicken breasts in the bottom of the crockpot.
  2. In a separate bowl, mix together the chicken broth, cream of chicken soup, heavy cream, garlic powder, salt, and pepper. Pour this mixture over the chicken.
  3. Add the frozen mixed vegetables on top.
  4. Cover and cook on low for 360-420 minutes or high for 180-240 minutes until the chicken is fully cooked.
  5. Once the chicken is cooked, remove it, shred it with two forks, and return it to the crockpot.
  6. Meanwhile, cook the egg noodles according to package instructions.
  7. Stir the cooked noodles into the crockpot, combine everything well, and let it cook for an additional 10 minutes.
  8. Serve hot and garnish with chopped parsley.

Notes

For added flavor, try using homemade chicken broth. You can adjust the consistency with heavy cream, and add more vegetables for extra nutrition.
