A creamy and hearty potato soup with bacon and cheese, perfect for cold days.

Ingredients

  • 4 medium-sized potatoes, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup cream cheese
  • 1 cup shredded cheddar cheese
  • ½ cup cooked bacon, crumbled
  • ¼ cup green onions, sliced

Instructions

  1. Add the diced potatoes, chopped onion, minced garlic, chicken broth, salt, and black pepper to a slow cooker.
  2. Cover and cook on low for 7 to 8 hours or on high for 4 to 5 hours until the potatoes are tender.
  3. Stir in the cream cheese until melted and well combined.
  4. Add the shredded cheddar cheese and crumbled bacon. Stir until the cheese is melted.
  5. Use a potato masher to mash some of the potatoes for a thicker texture, if desired.
  6. Serve hot, topped with sliced green onions.
