Homemade Oatmeal Cream Pies

Soft, chewy cookies filled with a sweet and creamy filling, perfect for celebrations or as a snack.

Ingredients

  • 1 cup quick-cooking oats
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup creamy filling (store-bought or homemade)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix the oats, flour, baking soda, salt, and cinnamon together in a bowl. Set aside.
  3. Cream together the softened butter, brown sugar, and granulated sugar in a large mixing bowl until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture. Mix well.
  5. Gradually add the dry ingredients to the wet ingredients. Stir until fully combined.
  6. Drop tablespoon-sized balls of dough onto the prepared baking sheet, leaving space between them as they will spread.
  7. Bake for 10-12 minutes or until the edges are golden brown. Remove from the oven and let cool on a wire rack.
  8. Spread the creamy filling on the flat side of one cookie and top it with another cookie to form a sandwich.

Notes

For thicker cookies, chill the dough for 30 minutes before baking. You can try different fillings for a unique twist.
