Homemade Turkey Noodle Soup

A comforting soup perfect for chilly days or when feeling under the weather, made with leftover turkey and egg noodles.

Ingredients

  • 2 cups cooked turkey, chopped
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 6 cups chicken broth
  • 2 cups egg noodles
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 bay leaf

Instructions

  1. Heat a little oil in a large pot over medium heat. Add the onion, carrots, and celery, cooking until softened.
  2. Stir in the garlic and cook for an additional minute.
  3. Add the chicken broth, turkey, thyme, and bay leaf. Bring to a boil.
  4. Reduce heat and let simmer for 10 minutes.
  5. Add the egg noodles and cook for another 7-10 minutes, until noodles are tender.
  6. Season with salt and pepper to taste and serve hot.

Notes

Serve hot with crusty bread or crackers. Garnish with fresh herbs for added flavor.
