An easy and impressive sheet pan dinner featuring salmon, Boursin cheese, and crisp vegetables, perfect for weeknights or special occasions.

Ingredients

  • 4 salmon fillets
  • 4 oz Boursin cheese (garlic and herb flavor)
  • 1 lb baby potatoes, halved
  • 1 lb asparagus, trimmed
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 lemon, sliced (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the potatoes with olive oil, salt, and pepper. Arrange them on one side of the pan.
  3. Roast the potatoes in the oven for 15 minutes.
  4. Remove the pan from the oven and move the potatoes to make space for the salmon and asparagus.
  5. Place the salmon fillets on the sheet pan and top each with a generous scoop of Boursin cheese.
  6. Add the asparagus to the pan, drizzled with a little olive oil and seasoned with salt and pepper.
  7. Return the pan to the oven and roast for an additional 15-20 minutes, or until the salmon is cooked through and the asparagus is tender.
  8. Serve hot, optionally garnished with lemon slices.

Notes

For extra flavor, marinate the salmon fillets in lemon juice and herbs before cooking. Arrange ingredients in a single layer for even cooking.
