Delicious and filling burritos layered with tender chicken and fresh toppings, perfect for any meal.

Ingredients

  • 3 1/2 to 4 cups shredded rotisserie chicken
  • 1 tablespoon olive oil
  • 1/2 cup salsa
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Pinch of salt (to taste)
  • 1 can (15 oz) black beans
  • 1/3 cup jarred salsa
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 2 cups hot cooked rice
  • 1 tablespoon melted butter
  • 1 tablespoon fresh lime juice
  • 3 tablespoons cilantro, chopped
  • Salt
  • Burrito-sized tortillas
  • Shredded Monterey Jack, Cheddar, or Pepper Jack cheese
  • Pico de gallo or salsa
  • Guacamole
  • Sour cream

Instructions

  1. Heat the olive oil over medium heat in a large skillet.
  2. Add the shredded rotisserie chicken, salsa, chili powder, smoked paprika, cumin, garlic powder, and a pinch of salt. Stir well to combine and cook until heated through.
  3. Remove from heat and set aside.
  4. Mix the black beans with jarred salsa, chili powder, and cumin in a bowl until well combined.
  5. Assemble the burritos by taking a tortilla and layering on a scoop of rice, followed by the chicken filling, black bean mixture, and top with cheese.
  6. Add pico de gallo or salsa, guacamole, and sour cream for extra flavor.
  7. Roll the tortilla tightly and serve immediately. You can slice the burrito in half for easier eating.

Notes

For a vegetarian option, replace the chicken with grilled vegetables or tofu. Warm the tortillas slightly before assembling to make them easier to roll.
