A flavorful and hearty stuffed beef burrito, perfect for lunch or dinner. Customize with your favorite toppings!

Ingredients

  • 1 lb ground beef
  • 1 cup black beans (canned or cooked)
  • 4 large flour tortillas (10-inch size)
  • 1 cup cooked rice (white or brown)
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • ½ cup salsa (mild, medium, or hot)
  • 1 tablespoon taco seasoning (store-bought or homemade)
  • ½ cup sour cream (optional)
  • 1 avocado, sliced (optional)
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat a large skillet over medium-high heat to 350°F.
  2. Brown 1 lb ground beef, chopping into small pieces until no pink remains.
  3. Drain excess fat from the skillet. Sprinkle 1 tablespoon taco seasoning over the beef and pour in ½ cup salsa. Simmer for 4 minutes, stirring occasionally.
  4. Transfer beef mixture to a mixing bowl. Add 1 cup cooked rice and 1 cup black beans. Stir in ½ cup shredded cheese until ingredients are evenly distributed.
  5. Lay out a 10-inch flour tortilla on a clean surface. Spoon 1 cup of the beef mixture into the center of the tortilla.
  6. Optional: Add 2 tablespoons sour cream and 3-4 avocado slices across the filling.
  7. Fold the bottom edge of the tortilla over the filling, then fold in the sides. Roll the burrito tightly, ensuring the edges are sealed.
  8. Return the skillet to medium heat at 325°F. Place the burrito seam-side down and cook for 3 minutes until golden brown.
  9. Carefully flip the burrito and cook the other side for an additional 2 minutes. Remove from heat.
  10. Slice the burrito diagonally and garnish with fresh chopped cilantro before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. You can freeze them for up to a month.
